Quesadillas Max Mex

Quesadillas with corn tortillas, a perfect recipe to use up the roast chicken you have left over from Sunday.

Ingredients

Max Mex

2 corn tortillas

200g grated cheese

200g of mushrooms (portobello)

200g roast chicken

100g creme fraiche

4 piparras

1 lime

Instructions

  1. We put a frying pan on the fire, and heat a pancake.
  2. We cut and sauté the mushrooms.
  3. Using your hands, shred the chicken and mix it with the grated cheese. It should be a cheese that melts.
  4. We added the Max Mex.
  5. We put the mixture on top of the pancake, cover it with the other pancake and put the lid on the pan.
  6. After 3 minutes we turn it over and wait for the cheese to melt.
  7. In a bowl, mix the creme fraiche with a little Max Mex and the zest of a lime, you can also add a little juice.
  8. We cut the quesadilla and plate it, accompanying it with the piparras.
