1. Clean, dry and cut the mushrooms.
2. Sauté them in a frying pan with a little oil, over high heat.
3. In a bowl, separate the 2 egg yolks, add grated parmesan, and a tablespoon of Joyful Coast.
4. If the mixture is too thick, add a little water. Emulsify everything well and add salt or soy sauce.
5. When the mushrooms are golden, add them to the bowl with the previous mixture.
6. Mix everything well and cook over low heat, stirring constantly, for a couple of minutes.
7. We want it to have a sauce-like texture, without curdling.
